Brinjal, also known as eggplant, is a fruit (and not a vegetable). It has an elongated and cylindrical shape with an average of 2.5 to 4cm in diameter. About the taste, brinjal has a mild and slightly bitter taste when raw and changes to slightly sweet, earthy, and savory when cooked. As the name suggests, this brinjal is great for preparing Bharta. It has reddish violet to light violet strips on the surface with green calyx, has thrones on it, and has a creamy white or pale yellow flesh.
Brinjal Kateri can be used for Bharta as well as for grilling and stir-fries; or stuffing it with cheese, breadcrumbs, and other fillings, etc. Mash roasted brinjal and add a handful of tahini, olive oil, lemon juice, and garlic to make extremely mouth-watering dips and spreads like Baba Ganoush.
